Caelus is the culmination of 30 years experimenting with the Pinot Noir variety, searching for the best spot in the Penedès, the ideal conditions for cultivation and the most delicate care. The culmination of an art of elaboration that lets us discover and enjoy the maximum expression of the Pinot Noir, with the distinctive personality it acquires in the Penedès region.
The fineness and delicacy of the bubble, the complexity and aromatic honesty of this cava provide a unique experience. On the palate, it offers a perfect balance between creaminess and freshness. An elixir with infinity of red fruit aromas that remind us it is a red variety vinified as a Blanc de Noirs. The freshness persists accompanied by a wide immensity of hints.
After its ageing of more than 60 months in cork cap, which brings great complexity and creaminess, overcomes the willingness of preserving the most pure and delicate aromas. Just as it is, it is manually disgorged with no addition of liquor.
